Super Foods Veggie Delight <br /> <br />Servings: 3 Serving Size: 1 ½ cups <br /> <br />Ingredients: <br /> <br />1cupquinoa, uncooked <br /> <br />1cupcollard greens, chopped <br /> <br />¼cupblack lentils <br /> <br />1/3cupred bell pepper, finely chopped <br /> <br />¼cuponion, finely minced <br /> <br />1tbsp.extra virgin olive oil <br /> <br />2tbsp.roasted soy nuts <br /> <br />1tsp.NutriFit Lemon Garden Salt Free Spice Blend <br /> <br />2 ½cupsvegetable broth <br /> <br />Directions: <br /> <br />1. Rinse the quinoa in a colander three times until the water runs clear. Drain well. <br /> <br />2. Heat a nonstick saucepan over medium heat. Add the olive oil, onions, and bell pepper and saute for 2-5 minutes, or until onion is translucent. Add the quinoa to the pan and saute for 5 minutes, until the grains are coated and lightly toasted. <br /> <br />3. Add the broth to the pan with the lentils, collards and seasoning; bring to a boil, reduce heat, cover and coook until liquid is absorbed and quinoa is cooked. <br /> <br />4. Sprinkle the soy nuts over the top before serving.
